The World Cooking Championship, the road to Bocuse d'Or

Sigurjón Bragi will be Iceland's representative at the Bocuse d'Or European competition in Budapest this March. The top ten places in the European competition will earn the right to compete in the main competition in Lyon in 2023.

Sigurjón Bragi Geirsson is the head chef at Héðinn kitchen & bar and has previously worked at Kolabrautin in Harpa, at Essensia, and at Múlakaffi. He was on the national culinary team for several years and coached the team when it won 3rd place at the Culinary Olympics in 2019.

“I would say that participating in such a big competition is about a 14-month process. I have very good assistants, which I'm very lucky to have. We are all at a point where we want to put in that extra effort to reach our goal. That's not a given,” says Sigurjón, who is incredibly grateful for the good group of people supporting him.

Participating in competitions has an impact

Sigurjón says that participating in competitions has a big impact on how individuals develop as professionals and on the profession as a whole. “Everything related to competitions you do in your free time,” he says, adding that good organization is crucial. “You learn to be stronger as an individual and also to work in a team; it's a lot of collaboration,” he concludes.
