Two interesting courses with master baker James A. Griffin

James A. Griffin, master baker and instructor from Ireland, will be in Iceland from 10–14 January. On Saturday, 13 January, he will hold two courses for bakers and pastry chefs.

James A. Griffin will hold two courses for bakers and pastry chefs on Saturday, 13 January at the Hospitality and Culinary School in Kópavogur. The first course is called Bread and Baked Goods, Preparation for Competitions and runs from 9–11 a.m. The second course is a judging course for bakers and runs from 12–2 p.m. Click on the courses for more information and to register.

James runs Griffin's Bakery in Galway, Ireland. The bakery has a long history, founded in 1876 by James's great-great-grandfather, making James the sixth generation to run the bakery. James completed his studies in the baking trade in 1985. He completed a degree in pedagogy in 2014, a B.Sc. in Baking and Pastry Arts Management in 2015, and an M.Sc. in New Product Development and Culinary Innovation in 2016. He has also taken numerous courses related to the profession. In recent years, James has held many masterclasses related to the baking profession and has served as a judge in international competitions for bakers and pastry chefs, organised competitions for bakers, and more. James is a part-time baking instructor at the Dublin Institute of Technology.
